Started watching Hitman Reborn on CR. I’m enjoying it so far. It definitely needs a reboot with less filler and less recaps!!

Yes on Soul Eater. Hope someday they do a Brotherhood on it and adapt the series proper. A little more niche, but would love a reboot of Karin (Chibi Vampire).

You have no idea how badly I want a Baccano reboot. There is so much source material they could adapt, and considering the massive success of Durarara, I think Narita's other work deserves a second chance. I would love an animated adaptation of the Alice in Jails arc.
Way back when, I started frequenting ANN in the first place hoping for more Baccano news, in fact.

The only ones I feel a reboot isn't exactly necessary for from the list are Reborn! & Berserk, personally. Considering how long the original Reborn! anime wound up going for in the first place, I just say pull an InuYasha or Bleach & make a "Final Chapter" series that simply adapts the remainder of the manga. Also, to "cut out the first 20 episodes of gag filler" would essentially remove the entire set up for Reborn! in the first place, requiring a complete re-imagining of how the series established itself, which is just all the more reason why I'd side more with a "Final Chapter" route, rather than a full reboot.
As for Berserk... Well, it's obviously just a reactionary "We didn't like the last anime adaptation, so just burn it all to the ground & start over!"; I just feel that any more Berserk anime should simply continue on with the manga, because otherwise a reboot would give us a THIRD adaptation of the Golden Age Arc, which would be just overkill. But that's just how I see it, and Stephanie & Jacki are more than allowed to feel differently; having varying opinions is part of the fun, as long as it's friendly, right? The other three picks, though, I fully see the point of rebooting, to varying extents.

As for my picks, I've generally stayed rather consistent with them over the years, luckily:
-Bastard!!: Having re-read the manga earlier this year, & finally went beyond Viz's release, I'd love to see a new anime adaptation all the more so now, though it's violence & sexual content would definitely make it next-to-impossible to air on TV, even in late-night in Japan. This would definitely need to be a Netflix series, ala Baki.
-Ashita no Joe: For such an iconic manga, it's a bit of a surprise that it never got an anime reboot. I know that such an idea was tossed around for the 50th Anniversary, before resulting in Megalobox, but I'd still love to see a new take on the original manga. Sure, it more than likely wouldn't be anything like Osamu Dezaki's two anime series in style, but neither should it be; make an occasional homage to Dezaki, sure, but otherwise be its own thing.
-Fuma no Kojirou: Admittedly, as a fan of Masami Kurumada, I'd rather see a reboot of B't X or a "Final Chapter" series for Ring ni Kakero 1 (or even a first-time adaptation of Otoko Zaka), but a new adaptation of Fuma no Kojirou would honestly be the most reasonable. Being only 10 volumes long, it could easily be adapted into a two-cour series, retaining everything that was cut out of the original OVA adaptation, and it could even adapt the Prologue Chapter & Final Chapter content that Kurumada made for the series last year, making it a definitive adaptation.
-Eat-Man: This is just an easy one to do, since the series itself is (mostly) episodic. Just adapt a "best of" selection of stories from the original manga (especially the Leon Arc & Mole Arc), while also adapting the stuff that actually has continuity to them, and then finish with the stuff leading into the final chapter.
As for a fifth pick, it used to be Dororo... But that actually happened, so I got nothing.

Ahh Baccano! I would love a reboot of that series. I want a proper adaptation of Drug & a The Dominos (my favourite)

I'd love to see a full Berserk anime, but since the manga isn't finished and who knows if it ever will be, it's hard to see the point of doing it yet. They'd spend 5 or more years adapting the current volumes and then we'd be back in the same situation.
I wouldn't mind seeing a Naruto/Shippuden reboot with no filler or recaps, or barring that, a Kai treatment of the existing material.
Also like to see The Twelve Kingdoms completed.
You know, while I'm lazing in Fantasy Land, I'd really love to see Ace of Diamond redone, only this time they could actually animate it. It's a sports anime, so I don't think it's too much to ask to see some movement besides hair or sleeves blowing in the wind to cover an otherwise static image. But never in a million years will this happen, and I'll call it lucky if we even get the rest of the manga "animated," so dream on, me.

One anime I wouldn't mind seeing rebooted is the first ever magical girl anime, Sally The Witch. I know the 60s show is pretty iconic, and the 80s series tried to present itself as a sequel, but wound up becoming a reboot instead that completely forgot to...age up its characters so it'd actually be a sequel, resulting in majorly screwed up continuity. I'm very curious to see what an adaptation taking place today would be like, especially since magical girl shows are still going on to this day. In the next six years, its 60th anniversary will be coming up.

Everyone who wants a reboot of Soul Eater... You'd still be let down in the end by the actual manga's ending. It has much of the problems that Fire Force that has been faithfully adapted has. Atsushi Ōkubo just isn't that great a writer is the brutal truth.

As someone whose read the Reborn! manga, I ever have the discontinued Viz release. I'm fine with the Anime the way it is, there was some good stuff after the Anime ended, but the actual end of the Manga is god awful. So unless they plan on completely redoing the ending, no thank you.

Ouran needs a sequel, not a reboot. The series is more or less perfect as is, and any issues it has stem from the source material, so rebooting it probably wouldn't fix them.
And how many times does Berserk need to be rebooted? It's getting to be like Spiderman at this point.
My top pick for a reboot is Basara. The old anime was 13 episodes for a 27-volume series and only told a small part of the story, has muddy colors and subpar animation even for its time, and is almost completely forgotten. Give the action-shoujo classic the adaptation it deserves.

Yu-Gi-Oh!. It needs a full remake starting from chapter 1 of the manga to chapter 343 with no changes that result in it becoming its own canon as shown with Yu-Gi-Oh! in 1998 and Yu-Gi-Oh! Duel Monsters in 2000. While Yu-Gi-Oh! did start at chapter 1 of the manga, it did change scenes and create its own original content (like Kaiba's Game Masters arc) that wasn't in the manga. There are only 59 chapters before Kazuki Takhashi focused on cards and they didn't adapt all of them.
As for Yu-Gi-Oh! Duel Monsters, which starts on chapter 60 in episode 2 because episode 1 is a condensed episode of Kaiba meeting Yugi in chapter 9-10 along with DEATH-T, it was made to sell a card game by Konami. This resulted in the story becoming lighter (in Japan standards) than in the manga, where death and dark scenes still remained. It was also airing at 6:30 PM. Not only that, have you ever wondered why Yami Yugi stops using the power of the puzzle after Duelist Kingdom? The aftermath of the Pegasus duel in the manga explains why, which the anime left out completely. It changed character relationships, such as Anzu not worrying or blushing at Yami Yugi every single time because she loves him to changing her to like Yugi more as shown with Rebecca, a filler character. Oh, there's a bunch more, but I've made my point.
2021 is the 25th anniversary of the manga. 2016 was the 20th and Konami actually allowed Kaz to make a sequel only to the manga in Transcend Game and The Dark Side of Dimensions. I'd be greatful if they'd allow the true story of Yu-Gi-Oh! as envisioned by Kaz to be told without having to sell a card game and air it at night so they won't really have to alter anything. They have SEVENS for their younger audience and card game promotion. Let the older audience who have been waiting to have this. Oh, and they can adapt R and Transcend Game as well. There is incentive.
The other series is RAVE. The series that made me love Hiro Mashima. RAVE is his best work and it wasn't fully adapted. This week starts the 21st anniversary. Sucks that it didn't happen on the 20th, but a remake needs to happen.
