So there's movies, and also a series version, which starts with an episode 0, which people are saying not to watch because it spoils things that happen later. I have no idea what I should be watching or waiting for.

Episode 0 basically covers the first half of the final volume, which I'm personally not a fan of doing quite yet but I can see how they're trying to position it as a framing device. Honestly though... you could probably plow ahead despite some manga readers reservations about it, like it's not worth worrying too much about "the best way to experience a series", just enjoy the ride (it's a damn good manga). Otherwise it'd just be some slightly confusing advice that'll end up like "wait until episode 16 to watch 0" or something, lol.

Surprised the first TV episode hasn't gotten a review.
